Ingredients

  • 1 (14 oz.) French loaf, cut into 1” pieces
  • ¾ cup unsalted butter
  • 1 large onion, chopped
  • 4 ribs celery, chopped
  • ½ cup fresh parsley, chopped
  • 2 Tbsp. fresh sage, chopped
  • 2 Tbsp. fresh rosemary, chopped
  • 1 Tbsp. fresh thyme, chopped
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 cup vegetable broth
  • 2 large eggs

Directions

  1. Preheat oven to 250° Spread bread pieces on a rimmed baking sheet and bake 30-45 minutes, until dried. Set aside and allow to cool.

  2. Heat oven to 350° Prepare a 9”x13” casserole dish with nonstick cooking spray.

  3. In a large skillet over medium heat, add butter. Add onion and celery. Sauté until softened, then transfer to a large bowl. Add parsley, sage, rosemary, thyme, salt and pepper to the bowl. Add bread pieces and stir gently.

  4. In a small bowl, whisk broth, almondmilk and eggs together. Pour over bread mixture and gently toss until combined. Transfer to prepared dish.

  5. Cover with aluminum foil and bake 30 minutes. Remove aluminum foil and bake 20 minutes, until golden brown.

  6. Serve and refrigerate leftovers.
