In a blender, add dates, cashews, strawberries, vanilla extract and almond and oat blend. Blend until smooth, then pour into a medium bowl.
Add chia seeds and stir until combined. Cover and refrigerate about 45 minutes, then whisk again.
Pour chia pudding into desired glasses and refrigerate at least 2 hours, or overnight, until thickened.
Top each with whipped topping and strawberries. Serve and refrigerate leftovers.
