Ingredients

  • 4 medjool dates, pitted
  • ¼ cup raw cashews
  • 1 cup strawberries, tops removed, plus more for garnish
  • 1 tsp vanilla extract
  • ⅓ cup chia seeds
  • ½ cup dairy free whipped topping

Directions

  1. In a blender, add dates, cashews, strawberries, vanilla extract and almondmilk. Blend until smooth, then pour into a medium bowl.

  2. Add chia seeds and stir until combined. Cover and refrigerate about 45 minutes, then whisk again.

  3. Pour chia pudding into desired glasses and refrigerate at least 2 hours, or overnight, until thickened.

  4. Top each with whipped topping and strawberries. Serve and refrigerate leftovers.
