In a large skillet over medium heat, add oil. Season chicken with salt, pepper and garlic powder, then place in skillet. Cook until browned and an internal temperature reaches 165°F.
Add broth, almond and oat blend and ranch seasoning mix. Bring to a simmer, then stir in cornstarch slurry and cook until thickened.
Place chicken in tortillas and top with lettuce, avocado, red onion and tomato.
Fold tightly and serve. Refrigerate leftovers.
