In a small saucepan over medium heat, add almondmilk, sugar and cocoa powder. Stir until warmed and sugar is dissolved. Remove from heat.
Stir in espresso or coffee, peppermint extract and vanilla extract.
Pour into 2 mugs and top each with whipped topping, shaved chocolate and crushed peppermint. Serve and refrigerate leftovers.
