Ingredients

  • 1½ cups all-purpose flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ¾ cup sugar, divided
  • 1 large egg
  • ¾ cup creamy peanut butter
  • 1 tsp. vanilla extract
  • 24 chocolate kiss candies, unwrapped

Directions

  1. In a medium bowl, whisk flour, baking soda and salt. Set aside.

  2. In a large bowl using an electric hand mixer, beat butter, brown sugar and ¼ cup sugar together until creamy. Add egg and beat until just combined.

  3. Beat in almondmilk, peanut butter and vanilla until combined. Add the flour mixture and beat on low speed until combined. Cover and refrigerate dough at least 1 hour.

  4. Preheat oven to 350° Prepare a cookie sheet with parchment paper or a silicone baking mat. Place remaining ½ cup sugar or desired sanding sugars in a shallow bowl.

  5. Scoop dough into a heaping 1 tablespoon ball and roll in sugar, then place on prepared cookie sheet.

  6. Bake 10-13 minutes, until tops begin to slightly crack. Remove from oven and press a kiss candy into each cookie. Transfer to a wire rack to cool.

  7. Serve.
