Preheat oven to 425°F. Place butter in a 12” cast-iron skillet and place in the oven while preheating.
In a medium bowl, whisk eggs, almond and oat blend, flour, sugar and vanilla extract together.
Remove skillet from oven and swirl melted butter around to coat pan. Pour in batter and bake 20-25 minutes, until puffed and lightly browned.
In a medium bowl, stir kiwi, strawberries, blackberries and grapes together.
Serve pannekoeken with mixed fruit and top with maple syrup. Refrigerate leftovers.
