No-Bake Cranberry Feta Nut Balls

Ingredients

  • ¼ cup cream cheese, room temperature
  • 2 cup feta cheese, crumbled
  • 1 tbsp. orange zest
  • 1 tsp. olive oil
  • ½ tsp. garlic powder
  • ¼ tsp. salt
  • ¼ cup dried cranberries, chopped
  • ¼ cup roasted shelled pistachios, chopped
  • ¼ cup crushed Original Nut-Thins®, plus more whole crackers for serving
  • ¼ cup packed parsley leaves, finely chopped

Directions

  1. In the bowl of a stand mixer, combine cream cheese, feta, orange zest, olive oil, garlic powder, and salt. Beat on medium speed until fully incorporated and slightly fluffy, about 3 minutes. Wrap or cover the bowl and transfer to the refrigerator to chill for 1 hour.

  2. Combine cranberries, pistachios, crushed Original Nut-Thins®, and parsley in a shallow bowl and set aside.

  3. Remove the chilled cheese mixture from the refrigerator and roll it into 20 to 24 bite-size balls, about 1½ tablespoons each. Roll balls in cranberry mixture, pressing lightly to coat the cheese all around. To serve, place one cheese ball on top of an Original Nut-Thins® cracker, or serve with crackers on the side.
