Preheat oven to 350°F. Place hazelnuts on a rimmed baking sheet. Bake 8-10 minutes, until toasted.Transfer to a plate and roll in a paper towel to remove skins. Discard skins.
Finely chop hazelnuts and place in a small saucepan. Add water and honey. Bring to a boil, then reduce heat to a simmer and cook about 10 minutes. Remove from heat and stir in vanilla.
Allow syrup to cool about 10 minutes, then strain mixture.
Fill 2 glasses with ice cubes. Pour espresso or coffee over ice, then top each with about 2 tablespoons of hazelnut syrup. Add almondmilk.
Serve and refrigerate leftovers.
