Preheat oven to 350° Prepare a 9”x5” loaf pan with nonstick cooking spray.
In a small bowl, combine apples, brown sugar and 1 teaspoon cinnamon. Set aside.
In a small bowl, whisk flour, baking powder, baking soda and salt together. Set aside.
In a large bowl using an electric hand mixer, beat butter and sugar together until light and creamy. Add eggs and beat until combined. Beat in applesauce and vanilla.
On low speed, beat in flour mixture, then slowly add in almondmilk. Pour batter into prepared loaf pan. Spoon apples and juice evenly on top. Use a knife to swirl apple mixture into batter.
Bake 60-75 minutes. Cover with aluminum foil if browning too quickly. Bake until a toothpick inserted in the center comes out clean.
Remove from oven and allow to cool slightly, then remove from pan and allow to cool completely on a wire rack.
Serve.
